The Classic Harbor Weekend Brunch Cruise is a relaxing zen like smooth/quiet sailing experience on the Manhattan a 1920s 80 foot buff- hulled commuter styled yacht with glistening smooth wood/large framed windows on the sides that open and a framed glass ceiling for taking in the sites, sunlight and moonlight. There is spacious couch seating, bar and an Island in the middle for buffet style service. The dining experience on this Brunch Cruise includes a 4 course buffet style meal starting with bagel & lox station & waffle station, fruit salad, fresh baked quiche, sausages, spiral ham paired with tiny roasted potatoes ending with desert and coffee. Diamante Eco– Adventure Park Located high above the Guanacaste coast a few miles drive from The Riu Palace and known for the longest dual ocean-view zip line cable in Central America called “Superman” where you speed over the gulf in a superhero position. The zip lining tour takes around an hour ending with a thrilling sponge cord free fall jump.
The Diamante Animal Sanctuary is an exotic experience where you can watch Costa Rica’s different monkey species, birds, wild cats, reptiles, spiders, sloths and more up close. Conservation is taken seriously in the sanctuary/region where all rescues are brought to Diamante by The Costa Rica Ministry of Wildlife (MINAE). The Buenaventura Grand Hotel & Great Moments is an all inclusive Hotel in Puerto Vallarta Mexico and a wonderful family resort with the easy traveling of 3.5 hours flight time from NY and just 15 minutes away from the airport. Arriving at the Hotel I walked into the entrance right in town walking thru the wide lobby to spill out the back of the hotel into sunshine, pool and beach heaven for the best of both worlds. The Resort is large enough without being too big and I loved that everything was in close proximity to walk to. The rooms are almost all fully renovated with state of the art TV’s, 24 hour room service and equipped with a mini bars refilled daily. There are 2 pools, 1 adult lounge pool and 1 baby pool with the smallest of the 2 pools holding plenty of pool activities- volley ball, exercise classes, aquatic classes and fun pool programs. Choose 4 dining style restaurants from buffet with a large array of fresh, local cuisine to fine dining in beautiful settings for lunch and dinner.

My daughter Brianna a 10 year old played not only in the kids club area but all around the resort accompanied by the kids club staff. I especially liked that the staff brought the kids to the beach; a nice bonus for some downtime relaxing with a rum & coke and a good book since I didn’t have to watch her near the waves every 2 minutes. Brianna easily made friends but when they had to leave for dinner or to return home the staff became her friends as ping pong partners, playing tag in the pool; pretty much any kid activity the hotel had to offer. If you want to walk around the hotel there are beautiful paths and The Lobby Bar, Cabana Bar and Beach Club Bar where you can sip and swing to the splendor of the Pacific Coast. Want to quickly unwind by melting into a message or get beautified? Visit the Shakti Spa and get a few services since the peso exchange rate won’t melt your wallet. The resort holds nightly entertainment so I sauntered to the theater with flower fragrances in the night air and red wine in hand to see the Mexico Show; a lovely way to end the evening after dinner.
The Villa Premiere Boutique Hotel the parent Co’s adults only, all suites, premiere all inclusive resort is right next door and perfect for zen like relaxing, romance and weddings. The 2 resorts sit in the center of town where you can walk within 5 minutes to the The Malecon Boardwalk with lively restaurants, shops and music flowing from grand set clubs and street musicians. There is also a big art scene noticed on the promenade with sculptures to sit on, individual artist paintings for sale and portrait painting available. Walking back to the hotel we caught the colorful Papantla Bird-men swinging from a pole performance on the beach and a fireworks display while eating tasty snacks from street vendors.

Dolphin Discovery – Open daily from 10-5 is an Aquatic Park jam packed with water packages is a great family experience. We chose a swim with the dolphin’s package and water park where we had an adorable dolphin named Eddie to pet and swim with for 45 minutes; he even made motorcycle noises and followed a few of our commands that the trainer taught us. We took to the lazy river to soak up the fun then my daughter did the water slides for an hour. The park is easy to do all 10 slides since there’s hardly any waiting lines. My associate and I did the zip line a first for me. After my fun I took Brianna to the climbing gym difficult enough for adults to do yet safe for ages 7 and up with included rope snares then tried the rock wall where she was given a chance to climb a couple of times at one shot. Lunch was definitely not park food with a large menu of home cooked/ healthy choices to please adults and kids. There is a selection of non-alcohol and alcohol beverages and a variety of packages that include food & drinks.

Vallarta Adventures excursion to YELAPA & MAJAHUITAS – A fun filled packed 1 day excursion that comes with a boat ride to and from YELAPA & MAJAHUITAS islands including breakfast, lunch, snacks, alcohol & non-alcohol beverages. We took pictures of the Islands, snorkeled and chose the beach stay that includes umbrella/lounges with food/drinks optional. My daughter was in animal glee playing with a crab and cuddling a huge iguana. The second option was climbing the Yelapa Waterfall for the adventurous. On the boat ride back we enjoyed a show on the deck in the sunset with an added bonus: whale watching when a curious whale came close to the boat; not part of the excursion but does happen.

Château Kirwan Vineyard for a hosted wine tasting party and regal city of Bordeaux France, breathtaking French Riviera and the charming Green Venice Canal excursion in la Rochelle France. There is plenty to do on board when transatlantic crossing or to unwind with ships pool, jacuzzi, spa, gym, table/board games, movies, regional shows/entertainment, lounges and more.
The culinary part of this experience was a foodies indulgence ordering breakfast, lunch or dinner in your room or bauquet /sit down service, excursion traveling with chefs to local markets while they pick food for the evening cuisine. cooking demonstrations with guest Chef Maria Hines. Wine tasting/seminar of the regional wines with Sommelier William Davis in every port, Chef pairing dinner extravaganza, Formal dining every evening with wine, ship deck barbecue with tons of raw seafood, cooked meats and all the fixings.
I also had a chance to sit down and talk about the history of the James Beard Foundation that has raised over & 6.5 million in scholarships over dinner with Marilyn Platzer – CFO/COO and her husband Kenneth Platzer also on this cruise.

A New way of Cruising was born when Fathom’s Tara Russell had a vision and met with Arnold Donald the CEO of Carnival Corporation on Impact Cruising. Tara Russel’s brainchild Fathom Travel launched on June 15th 2015 and came to fruition on April 17th 2016 on the inaugural ship Adonia sailing from Port Miami to Amber Cove in Puerto Plata, Dominican Republic on a 7 day round trip cruise. Impact traveling was a difficult and massive plan to implement needing the help and cooperation of Carnival Corp., Community leaders, infrastructure of local organizations, 85 million dollar port called Cove Island and the acquisition of a 740 passenger vessel that was part of the Renaissance cruise fleet.

The inaugural sailing itinerary to the Dominican Republic sta 1 day at sea where you are served Dominican Republic inspired drink specialties and cuisine, receive on-board social impact seminars and training. You also have a choice to relax and recharge with a library, spa, pool, 2 whirlpools, gym, 4 lounges and four varieties of cuisine spots from casual to fine food – buffet, grill and Pacific and Ocean Grill restaurants. There are 4 types of cabins outside/inside balcony and suite; even the inside room is spacious with a desk, couch and twin beds that can convert to a queen. When the ship docked for 4 days on land my daughter, associates and I walked to Cove Island to relax, swim and get the sun in the large pool and slide but there are lots of other choices such as a zip line, cabanas, dining, entertainment, shopping, sea and land excursions, beach getaways, deep sea fishing & catamaran, water sports activities, golfing, culinary/city tours, and ATV off-road.

Since attending the Social Impact Seminars we learned there are many Impact choices including a Cocoa Coop – chocolate making and packaging by hand for retail , Reforestation – clearing land to plant seedlings; we agreed to choose the English teaching Impact excursion where you teach english to families in the surrounding towns. When we first met the families we were given english text books to use; paired off with a family (your choice) and went to their home. It was enjoyable there were 10 family members and throughout the lesson we all laughed while trying to pronounce each other’s language – english/tropical Latin creole. I found the family to be enthusiastic, ready to learn, warm and grateful for the help they were receiving from us and Fathom Travel plus my daughter was getting a wonderful learning/teaching experience that will stay with her as a lasting impression.


The freedom of being able to go on land anytime for social impact/individual excursions and Amber Cove was a good mix of activities; I especially enjoyed my home on the Adonia a mid size ship, easy to get around with a festive sun deck, tropical cocktails, salt water pool and a running track on the top deck a big plus for me. My favorite meals were at The Pacific Grill done in an elegant Gatsby design that offers a wonderful variety of the local Faire- Fine and Fusion food. There were plenty of activities for the kids to do including evening events from Dance happenings to a costume party.
